Zucchini Spread

This zucchini spread is delicious as a healthy sandwich spread or as an appetizer.

ZUCCHINI SPREAD


Preparation time: 5-10 minutes


INGREDIENTS:


1 zucchini

1 clove of garlic

2 tablespoons of olive oil (or any other vegetable oil)

lemon juice

fresh or dried parsley

salt

pepper


INSTRUCTIONS:


  1. Cut the zucchini into small cubes and chop the garlic and parsley (if fresh).

  2. Put the zucchini, garlic, parsley, olive oil and a little lemon juice in the food processor and mix until smooth.

  3. Season with salt and pepper and mix it through.

  4. Serve the spread in a bowl and garnish with some parsley or fresh basil.
