This zucchini spread is delicious as a healthy sandwich spread or as an appetizer.
Preparation time: 5-10 minutes
1 clove of garlic
2 tablespoons of olive oil (or any other vegetable oil)
fresh or dried parsley
Cut the zucchini into small cubes and chop the garlic and parsley (if fresh).
Put the zucchini, garlic, parsley, olive oil and a little lemon juice in the food processor and mix until smooth.
Season with salt and pepper and mix it through.
Serve the spread in a bowl and garnish with some parsley or fresh basil.
Can be stored in an air-tight container in the fridge for 3 days.
