Vegetable Curry with Lentils and Rice

This tasty curry with lots of vegetables is easy to make and healthy!

Vegetable Curry with Lentils and Rice


Servings: 2 persons

Preparation time: 25 minutes


INGREDIENTS:


150 grams of whole grain rice

1 onion, finely chopped

2 cloves of garlic, pressed

1 broccoli, in florets

1 bell pepper, in cubes

250 grams of green lentils, drained and rinsed with water

250 ml coconut milk

400 ml of water

1 tablespoon of vegetable oil

1 teaspoon of turmeric powder

2 teaspoons of garam masala

1 vegetable stock cube

pepper

salt


INSTRUCTIONS:


  1. Heat the oil in a casserole, add the onion and let it simmer for 2 minutes.

  2. Add the garlic, broccoli, pepper and turmeric and let it simmer for 5 minutes.

  3. Then add the water and crumble the vegetable stock cube. Stir well and let it simmer for 10 minutes.

  4. Meanwhile, cook the rice according to the instructions on the package.

  5. Then add the coconut milk, lentils and garam masala to the casserole. Let it warm through for another 3 minutes. Season it with salt and pepper.

  6. Serve the curry with the rice. Enjoy!
