Tomato soup with hummus

You must think hummus in a soup, what kind of a combination? But it is so delicious, it makes the soup extra creamy!!!


Preparation time: 35 minutes


1 onion, finely chopped

2 cloves of garlic, minced

1 carrot

2 cans of diced tomatoes

1 1/2 l of vegetable broth

4 tablespoons of hummus

1 teaspoon of oregano



vegetable oil


  1. In a large pot, heat the vegetable oil on medium heat. Add the onion, garlic and carrot and cook until softened.

  2. Then add the tomatoes, broth and spices and bring it to simmer. Cook for about 20 minutes.

  3. Add the hummus and mix the soup by using a hand mixer. Mix until smooth.


  • Can be stored in an air-tight container in the fridge for a day.
