Summer mashed potatoes

This summer mashed potatoes with arugula and Mediterranean vegetables is delicious and packed with vitamins!

Summer mashed potatoes

Servings: 4 persons

Preparation time: 25-30 minutes


1 kg of potatoes 1 shallot, finely chopped 2 cloves of garlic, pressed 1/2 zucchini, in cubes 2 tomatoes, in cubes 60 grams of arugula 2 tablespoons of (plant-based) milk vegetable oil handful of Parmesan cheese handful of seeds (e.g. pine nuts or sunflower seeds) oregano nutmeg pepper salt


  1. Peel the potatoes and cut them in half. Cook them in a pan with water and a pinch of salt.

  2. Meanwhile, put some oil in a pan and add the shallot. Bake for 2 minutes.

  3. Then add the zucchini and tomatoes and season a little with salt and pepper. Bake for 5-10 minutes.

  4. When cooked, drain the potatoes and mash them with the milk. Season with nutmeg, oregano, pepper and salt.

  5. Then mix in the garlic, zucchini mixture, Parmesan cheese, seeds and arugula.
