Red cabbage Salad with Apple, Mint and Lime

This red cabbage salad with apple, mint and lime is refreshing, delicious and healthy! Red cabbage is packed with vitamins and also boosts your immune system.
Red cabbage salad with apple, mint and lime
Servings: 4 people
Preparation time: 10-15 minutes
INGREDIENTS:
1/4 red cabbage, thinly sliced
1 Granny Smith apple, cubed
1 lime, juice
1 tablespoon of agave syrup
1 handful of raisins
2 tablespoons of fresh mint, finely chopped
salt
pepper
INSTRUCTIONS:
Add the red cabbage in a large bowl and sprinkle with a good pinch of salt. Mix everything well with your hands for a few minutes.
Whisk a dressing with the agave syrup, lime and mint. Season the dressing with freshly ground pepper.
Add the apple cubes and the raisins to the red cabbage, pour the dressing on top and mix everything together.
NOTES:
Can be stored in an air-tight container in the refrigerator for 2-3 days.
