Quinoa salad with peanut dressing

This salad with quinoa and peanut dressing is delicious and easy to make! You can eat it as a salad or as a side dish.


Servings: 4 persons

Preparation time: 20-25 minutes


75 grams of quinoa 2 zucchini 5 carrots 1 red bell pepper 2 cloves of garlic 125 grams of peanuts 4 tablespoons of soy sauce 4 tablespoons of hot chili sauce 1 teaspoon of ginger powder


  1. Wash and strain the quinoa before cooking. Then put the washed quinoa in a pan and add 2 dl of water. Cook for 8-10 minutes.

  2. Meanwhile, cut the zucchini, carrots and bell pepper into small strips or by using the food processor. Press the garlic and then put all the vegetables in a large bowl.

  3. Drain the cooked quinoa and let it cool.

  4. Put the peanuts in the food processor and mix until smooth. Then add the soy sauce, chili sauce and ginger powder and mix well.

  5. Add the cooked, cooled quinoa to the bowl with vegetables and mix well. Then pour the dressing over the salad and mix again. Sprinkle with some peanuts to garnish.


  • Can be served as a salad or as a side dish.

  • Can be stored in an air-tight container in the fridge for a day.
