How delicious do these pineapple donuts look? They are not real donuts of course, but the healthy version of it.
Servings: 6-8 donuts Preparation time: 30-40 minutes
1 pineapple, cut in slices of 3-4 cm
150 grams of flour
1/2 teaspoon of baking powder
2 eggs or flax eggs
250 ml of (plant-based) milk
1 teaspoon of coconut oil
1 teaspoon of cinnamon
Add the eggs, milk, flour, cinnamon and a pinch of salt into a bowl and mix until smooth.
Add the coconut oil into a pan and heat it up.
In the meanwhile, add two slices of pineapple into the batter and place them carefully into the pan. Fry them 3 minutes on both sides over low heat.
Serve them right away and enjoy!
