No Bake tricolor cheesecake

This no bake cheesecake is naturally sweetened and has a healthy, tasty bottom of dates and oatmeal. As a tricolor topping to celebrate France's National Day, I used forest fruits and a little whipped cream (the only less healthy thing about this cake).

No Bake tricolor cheesecake


Servings: 1 cake

Preparation time: 30 minutes + 3 hours 30 minutes in the refrigerator


INGREDIENTS:


Bottom

250 grams of dates, pitted

80 grams of coconut oil or plant-based butter, melted

80 grams of walnuts

150 grams of oatmeal


Filling

750 grams of (plant-based) cottage/curd cheese

5 tablespoons of agave syrup or honey


Topping

200 grams of forest fruits

Whipped cream: 250 grams of mascarpone, 40 cl (plant-based) cream and 30 grams of cane sugar


INSTRUCTIONS:


  1. Put all the ingredients for the bottom in a food processor and grind finely. Divide the mixture over the cake tin and press well. The side may be 1 cm higher than the rest of the bottom. Place the cake tin in the refrigerator for at least 30 minutes.

  2. Then put the ingredients for the filling in a bowl and mix well. Pour the mixture over the bottom and let it set in the fridge for at least 3 hours.

  3. Put all the ingredients to make the whipped cream in a food processor and whisk well.

  4. Afterwards garnish the cake with the forest fruits and the homemade whipped cream. Enjoy!



NOTES:


  • Can be stored in an airtight container in the refrigerator for 1 day.

  • You can also replace the forest fruits with other fruits of your choice.

  • If you want to make the cake completely healthy, you can leave out the whipped cream.
