Mediterranean couscous salad

This Mediterranean couscous salad is packed with different flavors. Delicious as a salad or as a side dish!

Mediterranean couscous salad

Servings: 5-6 persons

Preparation time: 15-20 minuten + 1 hour in the fridge


500 grams of couscous 2 cloves of garlic, pressed 1 spring onion, finely chopped 1 cucumber, peeled and in cubes 200 grams of green olives, in cubes 125 grams of semi sun-dried tomatoes, in cubes 400 grams of chickpeas, drained and rinsed 100 grams of feta cheese, crumbled 2 tablespoons of vegetable oil handful of fresh mint, finely chopped 2 tablespoons of oregano 1 tablespoon of cumin powder pepper salt


  1. Prepare the couscous according to the directions on the package.

  2. Add the oil and cumin powder and mix together. Allow to cool for at least an hour.

  3. Add the garlic, spring onion, cucumber, olives, semi sun-dried tomatoes, chickpeas, and feta cheese. Mix gently.

  4. Then add the fresh mint, oregano, pepper and salt and again carefully mix together.

  5. Garnish this with some fresh yogurt garlic sauce or tzatziki!
