Lentil soup

This lentil soup is packed with healthy benefits as it is high in fiber, protein, vitamins and low in calories. Serve the soup with a little yogurt and fresh mint.

Lentil soup


Servings: 4-5 persons Preparation time: 50-60 minuten


INGREDIENTS:


200 grams of red lentils 2 onions, finely chopped 2 cloves of garlic, pressed 1 potato, in cubes 2 carrots, in cubes 400 grams of canned tomato cubes 70 grams of tomato paste 1 1/2 l of water vegetable oil 3 vegetable broth cubes 1 teaspoon of paprika powder pepper salt


INSTRUCTIONS:


  1. Heat the oil in a thick-bottomed pan and add the onion. Bake the onion until golden brown.

  2. Add the garlic, carrot, potato, diced tomatoes, paprika powder, pepper and salt. Bake together for a minute.

  3. Then add the tomato paste, red lentils, broth cubes and water. Turn up the heat. As soon as it bubbles, turn the heat to the lowest and let it continue cooking for about 30-40 minutes.

  4. Mix the soup with a hand blender until smooth.

  5. Garnish with your favorite toppings and side dishes and enjoy!


NOTES:


  • Topping ideas: fresh herbs, black pepper, croutons, seeds, unsweetened yoghurt or cream, ....

  • Side dish ideas: homemade garlic bread or focaccia.

  • Can be stored in an air-tight container in the fridge for 2-3 days.
