Homemade Mexican Pizza

When you combine Mexican flavors with Italian pizza dough, magic happens. This homemade Mexican pizza is so delicious, and still contains plenty of vegetables. You should definitely try it!
HOMEMADE MEXICAN PIZZA
Servings: 1 pizza Preparation time: 5 minutes + 10-20 minutes in the oven
INGREDIENTS:
1 pizza dough
2 table spoons of tomato pizza sauce
1/2 bell pepper, in slices or cubes
2 table spoons of corn, canned
1 tomato, in cubes
1 avocado, in slices
1 spring onion, finely chopped
60 grams of (vegan) mozzarella, in cubes
30 grams of grated (vegan) cheese
1 teaspoon of oregano
salt
pepper
As topping: hot sauce and (plant-based) unsweetened yoghurt
INSTRUCTIONS:
Preheat the oven to 180°C.
Cover the base with the tomato sauce, bell pepper,.corn, mozzarella, grated cheese, oregano, salt and pepper.
Then put the pizza in the oven for 10-20 minutes.
Then top with the tomato cubes, spring onion, avocado slices, some yoghurt and hot sauce. Enjoy!
NOTES:
If you like to have a cheesy crust, you can add some grated cheese to the side of the pizza dough, then roll up the dough and press it a bit. Then start covering your pizza.
You can also add some jalapeños, some beans or some (vegan) ground beef, if desired.
