Gazpacho

Gazpacho is a cold soup made of raw, blended vegetables. A real Mediterranean dish, especially served on hot days, as it is cool and refreshing.
Gazpacho
Servings: 2-3 persons Preparation time: 5 minutes + 3-4 hours in the refrigerator
INGREDIENTS:
2 cans of diced tomatoes (or you can use fresh tomatoes)
1/2 cucumber
1/2 bell pepper
2 cloves of garlic
1 large spring onion (or 2 small spring onions)
1 slice of bread
3 tablespoons of olive or sunflower oil
1 tablespoon of balsamic vinegar
1 tablespoon of ground cumin
salt
pepper
INSTRUCTIONS:
Add all ingredients (except the slice of bread) in a blender and mix until smooth.
Then add the slice of bread into the mixture and blend it again.
Refrigerate the mixture for 3 to 4 hours.
Then serve it with your favorite toppings or side dishes.
NOTES:
Topping ideas: fresh herbs, black pepper, croutons, seeds, cream, ....
Side dish ideas: homemade garlic bread or focaccia.
Can be stored in an air-tight container in the fridge for a day.
