Easy Healthy Tacos


These tacos filled with kidney beans and vegetables are much healthier than the traditional recipe and are very easy to make. I personally prefer these.

Easy Healthy Tacos


Servings: 8 taco shells (or bowls)

Preparation time: 30-40 minutes


INGREDIENTS:


8 taco shells (or bowls)

1 onion, finely chopped

2 cloves of garlic, crushed

1 bell pepper, cut into cubes

400 grams of kidney beans

150 grams of corn

400 grams of diced tomatoes

70 grams of tomato paste

1 teaspoon of paprika

1 teaspoon of cumin seeds

1 teaspoon chili flakes

pepper

salt


INSTRUCTIONS:


  1. Heat the oil in a frying pan, add the onion and garlic and simmer for 2 minutes over medium heat.

  2. Add the cumin seeds and paprika. Stir well and let simmer for another 2 minutes.

  3. Then add the kidney beans and corn and stir well. Let it simmer for 5 minutes.

  4. Then add the tomato cubes, tomato puree, chili flakes, salt and pepper and stir well. Reduce heat and simmer for about 20 minutes.

  5. Meanwhile, heat the taco shells (or bowls) according to the instructions on the package.

  6. Cover the tacos with toppings of your choice. I chose avocado, tomatoes, vegan feta cheese and a bit of lime juice!


NOTES:


  • Topping ideas: lettuce, tomatoes, bell pepper, corn, avocado, spring onion, coriander, jalapenos, salsa, guacamole, rice, quinoa, (vegan) sour cream, hot sauce, grated (vegan) cheese, ...
