Detox Soup with Carrots, Celery and Red Lentils


This detox soup with carrots, celery and red lentils is packed with vitamins and fiber. Ideal to eat on the colder days during your detox cure!

DETOX SOUP WITH CARROTS, CELERY AND RED LENTILS


Servings: 4-5 persons

Preparation time: 30 minutes


INGREDIENTS:


2 shallots, finely chopped

3 cloves of garlic, finely chopped

1 celery stalk, sliced

5-6 carrots, sliced

125 grams of red lentils

1.5 liters of vegetable broth

1 tablespoon of vegetable oil

1 teaspoon of ground coriander

1 teaspoon of cumin seeds

pepper

salt

Garnish: fresh coriander, seeds or kernels


INSTRUCTIONS:

  1. Add the oil in a large pan and heat it over high heat. Then add the shallots and garlic and fry for 3 minutes. If necessary, add a little water to prevent burning.

  2. Then add the celery and carrots and fry for 5 minutes.

  3. Then add the vegetable broth and red lentils and bring to a boil. Then reduce to medium heat and simmer for 20 minutes.

  4. Set a portion of the soup aside for a while and then mix the rest of the soup using a hand mixer. Then add the unmixed portion.

  5. Serve with some fresh coriander and seeds or kernels.


NOTES:
