Coconut Curry Noodles

Tasty noodles with coconut and curry !!
COCONUT CURRY NOODLES
Servings: 4 people Preparation time: 20-25 minutes
1 onion, finely chopped 2 cm ginger, finely chopped 200 grams of wok vegetables of your choice (I chose 2 carrots, 1 bell pepper and some broccoli florets), chopped 250 grams of noodles 200 ml coconut milk 1 teaspoon of chili powder 1 tablespoon of curry powder handful of peanuts pepper salt
Add the onion, ginger and chili powder in a wok pan and fry until the onion is translucent.
Then add the wok vegetables and season with salt and pepper. Fry until the vegetables have softened. If necessary, add a little water to prevent sticking.
Meanwhile, cook the noodles.
When the vegetables are soft, add the coconut milk and curry powder. Mix well and cook for a few more minutes.
Then add the noodles and mix well. Sprinkle some peanuts on top.
Can be stored in an air-tight container in the fridge for 1 day.
