Cherry (Chocolate) Cake

This cherry cake is easy to make, healthy and delicious with or without chocolate flavor. Perfect as an afternoon snack or dessert!
Cherry (Chocolate) Cake
Servings: 1 cake
Preparation time: 15 minutes + 45-50 minutes in the oven
INGREDIENTS:
200 grams of cherries, pitted
1 banana, mashed
1/2 lemon, juiced
200 grams of oatmeal
50 grams of all-purpose flour
1 tablespoon of baking powder
4 eggs
50 ml of maple or agave syrup
1 teaspoon of vanilla extract
Optional: 20 grams of raw cacao powder
INSTRUCTIONS:
Preheat the oven to 180°C.
Add the oatmeal, flour and baking powder in a bowl and mix it together. If you want the cake to have a chocolate flavor, you can now also add the cacao powder.
Add the mashed banana, lemon juice, eggs, maple or agave syrup and vanilla extract in another bowl and whisk until smooth.
Add the mixture of the wet ingredients to the bowl with the dry ingredients and mix until smooth.
Now add the cherries to the batter and stir in well.
Add the batter into a baking tin with parchment paper and put it in the oven for 45-50 minutes.
Let it cool for 10 minutes before taking it out of the baking tin. Enjoy!
NOTES:
Can be stored in an airtight container for 2-3 days.
