Cauliflower Curry Soup


If you like cauliflower, you should definitely try this cauliflower curry soup. Nutritious, healthy and easy to make!

Cauliflower Curry Soup


Servings: 4 people

Preparation time: 30 minutes


INGREDIENTS:


1 cauliflower, roughly chopped

2 potatoes, cubed

2 shallots, finely chopped

2 cloves of garlic, crushed

1 liter of vegetable broth

1 tablespoon curry powder

1 tablespoon of vegetable oil

pepper

salt


INSTRUCTIONS:

  1. Heat the vegetable oil in a pot and add the shallot, garlic and curry powder. Bake for 3 minutes. Add water to prevent burning.

  2. Add the cauliflower and potato cubes and fry for 5 minutes.

  3. Then add the vegetable broth and simmer for 20 minutes, until the vegetables are soft.

  4. Mix finely using a hand mixer and season with salt and pepper.


NOTES:

  • Can be stored in an air-tight container in the refrigerator for 2-3 days.

  • Topping ideas: (plant-based) cream, seeds, fresh herbs, croutons, ...
