Carrot Soup with Tangerine

This carrot soup with tangerine is packed with vitamins and is also delicious. Ideal for boosting your immune system!
Carrot Soup with Tangerine
Servings: 4 people
Preparation time: 25-35 minutes
INGREDIENTS:
1 kg carrots, peeled and diced
1 onion, finely chopped
2 cloves of garlic, finely chopped
2 cm ginger, finely chopped
1 liter of vegetable broth
juice of 3 tangerines
2 teaspoons of turmeric
pepper
salt
vegetable oil
INSTRUCTIONS:
Add some vegetable oil into a pot and heat it up.
Add the onion, garlic, ginger and turmeric and sauté for 3 minutes.
Then add the carrots and fry briefly.
Then add the vegetable broth and the juice of the tangerines and bring to the boil. Then reduce the heat and simmer for 20 minutes.
Mix it all by using a hand blender and enjoy!
NOTES:
Topping ideas: (plant-based) cream, seeds, parsley, croutons, ...
Can be kept in an air-tight container in the refrigerator for 2-3 days.
