Carrot Potato Fritters with Garlic Yoghurt Dressing

These healthy potato fritters are lightened up with carrots and flavored with curry powder. They're easy to make and delicious with some garlic yoghurt dressing!
CARROT POTATO FRITTERS WITH GARLIC YOGHURT DRESSING
Servings: 10 fritters
Preparation time: 20 minutes
INGREDIENTS:
Carrot Potato Fritters
400 grams of (sweet) potatoes, shredded or grated
300 grams of carrots, shredded or grated
85 grams of flour
2 eggs (or flax eggs)
vegetable oil
2 teaspoons of curry powder
salt
pepper
Garlic Yoghurt Dressing
125 grams of Greek yoghurt (or plant-based sugar free yoghurt)
1 clove of garlic, pressed
1 teaspoon of chives
salt
pepper
Optional: sambal or curry powder
INSTRUCTIONS:
Carrot Potato Fritters
Add the potatoes, carrots, flour, eggs, curry powder, salt and pepper into a large bowl and stir until well combined.
Form patties out of the mixture with your hands.
Add vegetable oil into a pan and cook the fritters until golden brown. 2-3 minutes on each side.
Serve with the garlic yoghurt dressing!
Garlic Yoghurt Dressing
Add the yoghurt, garlic, chives, salt and pepper into a small bowl and stir until combined. You can also add some sambal or curry powder to upgrade the flavor.
Serve with the carrot potato fritters! Also delicious in a salad or as a dip with some veggies or crackers.
NOTES:
Can be stored in an air-tight container in the fridge for a day.
