Carrot-leek soup

This delicious carrot-leek soup is the ideal solution if you do not have much time but still want to bring an easy and nutritious meal to the table.
CARROT-LEEK SOUP
Servings: 4 people Preparation time: 25 minutes
INGREDIENTS:
1 large leek, in rings 500 grams of carrots, in pieces 1 large onion, in pieces 1 large potato, in cubes 1.5 l vegetable broth vegetable oil pepper salt

INSTRUCTIONS:
Heat some oil in the pan and fry the onion briefly until it becomes translucent. Then add the carrot and leek and stir together, fry briefly and season with plenty of pepper and a little bit of salt. Then add the vegetable broth and bring to a gentle boil.
Then add the potato, put a lid on the pan and reduce the heat, the broth should simmer for about 20 minutes. Stir well for the last few minutes to allow the released starch to mix well with the rest of the soup.
Mix with a hand blender so it becomes a smooth soup.
NOTES:
Can be stored in an air-tight container in the fridge for 2-3 days.
