Cabbage burritos

These burritos are made with cabbage leaves filled with spicy ground beef mixture.
CABBAGE BURRITOS
Servings: 6 burritos
Preparation time: 40 minutes + 15 minutes in the oven
INGREDIENTS:
1 green cabbage (6 large leaves or 12 smaller leaves)
300 grams of ground beef (or vegetarian minced meat)
1 onion
1 clove of garlic
400 ml of diced tomatoes
1 tablespoon of tomato paste
1 tablespoon of taco seasoning
70 grams of corn
grated cheese
INSTRUCTIONS:
Finely chop the onion and garlic and fry in a pan. Add the ground beef and the taco seasoning and fry this. Stir in the tomato paste, diced tomatoes and the corn. Let it simmer for a few minutes.
In the meantime, bring a large pot of water to a boil and preheat the oven to 180 degrees.
Cut the cabbage leaves, cook them per 2 for about 2 minutes and then drain well. Take the cabbage leave (or 2 if smaller ones) and spoon of the burrito filling on one side, sprinkle with a little bit of cheese and roll up gently. Then place the stuffed cabbage roll into a greased baking dish. Repeat this for the other cabbage leaves.
Once they are all in the baking dish, sprinkle them with some extra cheese or leftover filling. Then put the baking dish in the oven for about 15 minutes.
NOTES:
Optional: You can also add some kidney beans into the filling or serve the dish with some rice.
Can be stored in an air-tight container in the fridge for 1 day.
