This cake is easy to make and delicious, packed with juicy apricots.
Servings: 1 cake
Preparation time: 15 minutes + 30 minutes in the oven
6-8 ripe apricots, cut in half
400 grams of oat flour
10 grams of baking powder
190 grams of coconut oil
125 ml (plant-based) milk
100 ml of maple syrup
Preheat the oven to 180 °C.
Add the coconut oil and maple syrup in a bowl and beat together.
Stir in the eggs and milk one by one.
In another bowl, mix the oat flour with the baking powder. Then add in the egg mixture and mix.
Spread the dough over a baking sheet lined with parchment paper and place the halved apricots on top.
Put in the preheated oven and bake for 30 minutes.
Can be stored in an air-tight container for 3 days.
